My family love summer holidays. Full of swimming, playing on the beach, mangoes and Monopoly. Time seems to fly by with ease as we fill our time together with family traditions and loads of fun. Annual holidays at the beach with extended family - a tradition carried on since my husband was a young boy.

We seem to go to the same places, do the same things, each year extending the memories and reminiscing. My children look forward to it fondly all year long! Ice cream from the Gelati shop, sandcastles on the beach. Scavenging for shells and New Year fireworks.

Not to mention our own personally engineered sparkler extravaganza from the balcony unit! Generations come together (some years more graciously than others) and enjoy this couple of weeks of just being together.

One of my greatest challenges is getting enough vegies into my little ones. The mere mention of the dreaded 'v-word' sends shivers down their spines. So here are a couple of great ideas to hide some vegies and still let kids feel like they are having a treat.

Pumpkin Raisin Cake

Ingredients:
1 1/2 cups cooked mashed pumpkin
1 1/2 raisins or currents
1 1/2 cups wholemeal SR flour
